Meatloaf with Garlic Glaze
I love meatloaf. It elevates hamburger to another level, and we eat a lot of hamburger, so that is a good thing! If you make lots, you can even use it in sandwiches the next day. And since I hate making lunches, this is a nice thing to have on hand.
Even better than a deliciously spiced meatloaf is one topped with a mouth watering glaze. And this glaze is easy. Make a big batch and use the extra to drizzle on your plate!
2 lbs ground beef
1 egg
2 tsp beetroot dip mix
2 tsp smokehouse bbq dip mix
Glaze:
1 c ketchup
2 tbsp Honey Garlic balsamic vinegar
1 tbsp Valencian Paella dip mix
Mix ingredients together. Press into an 8X8 baking dish. Bake at 350 F for about 1/2 an hour, until meat is cooked through. 20 minutes into baking, spread 1/2 cup of prepared glaze on top of the meatloaf.
Serve with sweet potato fries and extra glaze as topping.
Simple, easy and delicious. My kind of meal!
