Layered Salad
Growing up, this was a potluck staple, but only for the best of church lady lunches. No run of the mill potluck had a layer salad. You needed that great lady who took pride in her layers...and it was gone fast, so you needed to get your butt in line!
So when it was time to go visiting and bring a salad, I had a hankering for a good old layered one. Don't fear resurrecting this oldie but goodie, it is kid friendly too!
1 big head of lettuce, chopped fairly small
1 package bacon, cooked and crumbled (can skip if you want)
1 small red onion, cut very small
2-3 cups cooked peas, drained and cooled
2-3 eggs, hard boiled and chopped
3/4 c mayo
3/4 c yoghurt
2 tsp Pesto dip mix
1 tsp balsamic specialty salt
2 tsp honey garlic balsamic vinegar
1.5 c shredded cheese
Layer lettuce on the bottom of a 9X13 dish. It will shrink as it sits, so pile it as high as you can. Sprinkle with 2 tsp honey garlic balsamic vinegar.
Sprinkle on onion, peas and eggs.
Mix mayo and yoghurt with pesto dip mix and salt. Spread over top veggies into an even layer, covering the whole salad.
Sprinkle the top with shredded cheese and bacon.
You can seal this and serve it the next day, or eat it asap. You will be surprised if there are leftovers!
