Recipes

These are real life recipes.  I am not a food photographer, so you may need see the most beautiful meal pictures.  But I guaruntee they are tried and tested, by my 3 boys, my husband, and me!  If they are just okay, I will tell you.  If they are terrible, they won't be here!

The majority of my recipes are in the blog, as it is searchable, and has a table of contents.  This spot has the basics, as well as feature recipes!

What's for Dinner

Basic BBQ Sauce Mix

This is my favorite BBQ sauce, and I don't buy from stores anymore, I make my own.  I love it because I make up as much as I want, and change the flavores depending on my tastes using our amazing and varied balsamic vinegars!

1 c ketchup or plain tomato sauce

1/2 - 1 tsp Smokehouse BBQ dip mix (depends on your taste, more means it will be spicier)

2 tsp Country Onion and Chive dip mix

2-4 tsp Balsamic Vinegar of choice (my favorites are maple bourbon and honey garlic, but I love making it with Raspberry Orange, Raspberry Chocolate and Blueberry Maple as well!)

Mix together well.  Let sit at least 1 hour, but best overnight.  All the spices re-hydrate and create awesome flavor!

Basic Dip Mix

This is my favorite base for a dip mix, and what I always demo at parties and tradeshows.  You can also use sour cream, purreed chickpeas, all yoghurt or more mayo.

If you want a salad dressing, thin out with milk or water!

3/4 cup plain yoghurt (can be greek or not)

1/4 c mayo

1/2 to 1 tsp dip mix (adjust to your taste buds, but start here)

Mix well.  Let sit at least 1 hour, overnight is better as the spices will hydrate and flavor deepens.  Most dip mixes are very flavourful, so start with less and adjust to your taste.

Chewy Granola Bars

I have these granola bars in the house pretty much all the time. YIAH's Dukkahs are delicious in the granola bars, my favorite is White Chocolate Pistachio.

Because the Dukkah's have nuts, these can't go to school. But their healthful blends add an extra punch to granola bars, and are a great snack for home. Or, don't press them into the pan, and add a little bit more of both the rice crispies and quick oats, spread on a baking sheet and bake at 250 for 30 min (turning every 15 min), and create your own granola!

2 c quick oats
1 c rice krispies
1/4 c coconut
1/4 c marg
1/4 c honey
1/3 c brown sugar
3 tbsp
 Dukkah of your choice

1/2 c mini chocolate chips
1/2 tsp French Perfume salt

Mix oats, cereal, coconut in a bowl. In saucepan melt butter. Add honey, sugar, salt and Dukkah. When it is boiling all around the edges of the pan, boil hard for 2 min and 15 sec. Remove from heat, and add to dry. (this is where you could make the granola instead).  Add 1/2 c chocolate chips.

Press into the Perfect petite pan. Let cool, and unmold. They will not last long!

Family Pizza

When you ask the kiddos what they want for supper, more often than not, it will be "PIZZA!". Since we are a ways away from delivery, homemade is the way to go.

My favorite crust recipe is not a yeast crust, because it is quick, gets crispy, and easy. You can add any seasoning you want to it, but I really liked Roma Italian in here!

Crust:
1 2/3 cup flour (I use half whole wheat, half white)
2 tsp baking powder
2 tsp sugar
1/2 tsp salt (I used Balsamic salt, YUM, but could use many others)
2 tbsp oil (Primavera would be delish!)
1/2 c milk
1 tsp Roma Italian spice

Whisk dry together. Pour in oil and milk, mix with a spoon until too difficult, then finish with your hands, until it is combined. Let sit and warm the oven to 385 F.

Slice whatever veggies you want, I like to saute together onions, peppers and mushrooms, just until they are soft. This reduces some of the moisture, cooks them a bit, and lets your pizza finish quicker. Saute with a bit of oil, 2 tsp Herb and Garlic dip mix, and salt and pepper to taste (balsamic salt!)

Once oven is hot, put your crust on pizza stones (or whatever you use) and bake 10-20 min, until the edges and just starting to brown. Remove and spread with sauce (I used homemade tomato sauce sprinkled with herb and garlic dip mix - you could use storebought and do the same) and whatever toppings you like. I used ham, the veggies, pineapple and mozza cheese. Put back in the oven and bake at 350 until cheese is just golden brown, about 30 min. Take out, let sit for 10 min, cut and eat!

The Best Greek Salad

I have been making greek salad for years, it is one of my favorites. The kids love it too. But since getting my YIAH products, this salad has turned from great to exceptional! The Mediterranean Dukkah is amazing in here!

2 cucumbers, cubed
3 tomatoes, cubed
1/4 red onion, cut small
1 red/orange/yellow pepper, cubed
1 green pepper, cubed
1/2 napa cabbage, sliced**
1/2 c feta cheese, crumbled
3 tbsp Miracle whip
1/3 c red wine vinegar
2 tbsp lemon juice
1 tbsp Intense Garlic EVOO
1 Tbsp Mediterranean EVOO
1/4 c EVOO
Balsamic salt to taste
2 Tbsp Mediterranean Dukkah
1 tbsp Tzatziki Dip mix

Whisk Miracle whip, vinegar, EVOO's, Lemon juice and spices into bowl and whisk. Add veggies and cheese. Let sit a few hours if you can.

This makes a big salad, should be enough for generous helpings for 2 nights, and trust me, you want this. The longer it sits, the better it tastes!

**I just want to take a moment here to sing the praises of napa cabbage. It is always cheap in the grocery store, it lasts a lot longer in the fridge compared to lettuce, it is soft enough to use in salads (and doesn't get soggy like lettuce can), and "strong" enough to cook with (stir fry's, cooked cabbage and apples, etc.). I love this, and always have a head in my fridge. It is super in greek salad!
