Apple Crisp Cookie Cups

We have been on a whirlwind lately, with harvest, harvest suppers and then thanksgiving. I made these a few weeks ago now, and they are super, but haven't had time to share with you! They would have been great for Thanksgiving, but they will still be wonderful anytime you want and easy treat that will impress your family and friends.

These are also farmer approved, as they went with me on a field supper. You could fill these little cups with so many things, so make a bunch and keep them on hand instead of tart shells!

Oatmeal Cookie Cups

1 c butter

1 c sugar

1 c brown sugar

2 eggs

2 tsp vanilla

2 c flour

1 tsp baking soda

1 tsp baking powder

1 tsp french perfume salt

3 c oats

3 tbsp Rose White Chocolate Pistachio Dukkah (or Key Lime)

Cream butter and sugar. Add eggs and cream. Add vanilla.

In separate bowl, sift together flour, soda, powder, salt, oats and dukkah. Slowly add to butter mix and mix until incorporated.

Spray a muffin tin VERY WELL. Take a 1 to 1.5 inch ball of dough, slightly flatten, and press into muffin cup. Makes almost 24 cups. Bake at 315 for about 15 minutes, until brown. The edges will be darker brown then normal, as you want the bottoms cooked.

Remove from the oven, spray a shot glass, and push into the middle of the cookie cups, making a well. Let cool really well.

You may need to put these in the freezer to get these cups out. Trust me, it is worth it!

Apple Pie Filling:

2 tbsp butter

6 apples, chopped

1/4 c brown sugar

1/4 c white sugar

3 tsp cornstarch

2 tsp Country Apple Pie spice

3 tbsp Coconut Caramelised Spiced Rum Balsamic Vinegar

Melt butter in a pan. Add apples and saute until they begin to get soft. Add sugar, spices, cornstarch and vinegar. Cook until apples are soft and caramelised, and is quite thick.

You can serve these warm or completely cooled. And if you happen to have apples from a tree you have frozen for pies, you can use these too, just add the spices and vinegar, and saute until it is thick.

Oh yeah, and you can top with whip cream or ice cream, if you really want the full authentic experience!
