Cook Once, Eat Twice BBQ Turkey and Quesadillas

This is one of my favorite recipe features. As a busy mom, who is primarily responsible for feeding my family, I get tired of cooking. That's right, I said it, I get sick and tired of making meals! So I love making a bigger batch of something so I can re-use it the next night in a new dish. And if I am lucky enough to get some leftovers (not often in this family of 3 boys and 1 man who eats a lot!), I may actually get a third night of cleaning out the fridge! Awesome!

We fortunately get to butcher some ginormous turkeys with friends each year, which I love, and makes them great to use for multiple meals. We piece them out, so I can cook a wing and leg and it feeds us for 2 days! But you can easily do this with chicken or turkey thighs or drums. Cook extra so you can use this for a second meal.

Recipe 1 : BBQ'd Turkey

12-18 chicken or turkey drums or thighs (depending on your family size) 1 tbsp south African Cape rub 1 tbsp autumn harvest glaze 1 c butter milk or plain yogurt 3 tbsp coconut mango lime balsamic vinegar 3 tbsp wild lime evoo

Whisk ingredients together. Pour in a baggie with meat, and let marinate, at least an hour. Wrap in foil, and bbq on medium heat until cooked through. Try not to eat them all in 1 meal, they are delicious!!

Recipe 2: Turkey Quesadillas

Now that you enjoyed your BBQ'd turkey, it's time to use those leftover. This is a quick and delicious meal that the kids love.

Pull the meat from the bone and finely shred with a fork. Any leftover liquid in the bottom of the foil is perfect to soak into the meat.

Fry up 1 onion, and 1 green and red pepper until softened. Add the meat and 1 tbsp of 5 pepper enchilada dip mix, and warm through. Set aside.

Grate about 2 c cheese, set aside (I love jack cheese in these).

Mix up a quick guacamole using 3 avacado, 1 lime, 1/2 c plain yoghurt, and 1 tbsp tbsp guacamole dip mix. Set aside.

Mix up up a quick salsa by chopping 2 large tomatoes (or 1 can chopped tomatoes, drained), 1/2 an onion, and 1 pepper (optional). Add 2 tsp salsa dip mix, and let sit.

Oil large pan and place tortilla in it. Layer on cheese, meat mix, more cheese and top with tortilla (the cheese is like your glue!).

Cover with lid. Flip when under side is brown, leaving the lid off. When that side is brown, slide out and cut into 6 pieces.

Top with salsa and guacamole (or I mix the 2 in a container so the kids can dip).
