Cheddar Biscuits

So, some people apparently like red lobster biscuits. These were a copy cat recipe, I wanted cheesy biscuits! The original calls for a tiny bit of spice, but I used something different, because they were a base for mini pizzas (stay tooned! ). These were light and delicious, and will become my go to biscuit recipe for sure. This was my first time using my food processor to make biscuits. Wow, is it easy, I highly recommend it!

2 c flour 1 tbsp sugar 1 tbsp baking powder 1 tbsp Tomato and herb dip mix (for a more original taste, use 1 tsp Louisiana creole. Also herb and garlic is good). 1/2 tsp porcini salt Put all ingredients in processor. Pulse til combined. Add: 1/2 c butter Pulse til an oatmeal texture, want to have pieces of butter visible. Add: 1 1/2 c shredded cheese Plus until just combined. Add: 1/2 c buttermilk (or sour milk) Pulse until dough is just combined and starts to form a ball. Knead a bit to make sure dough stays together. Roll out to desired thickness (about 1 inch is nice). You can space them fairly close on a baking sheet. Bake at 450 F for 10 to 12 minutes, until slightly golden.
