Crisp and Chewy Oatmeal Cookies
These cookies are the result of much trial and error. A holy grail, cookie of a life time type of search. You know those delicious oatmeal store cookies, from the bakery, that are too buttery, and sugary, and over an hour away, and delicious. Well, I wanted to make those at home. But it is hard to find a recipe to get the perfect mix of sweet and buttery, crisp and chewy. These are it, without being excessively sweet like the grocery store ones often are (that is what is great about making your own!). I love adding the black forest or key lime dukkah, adds another level of texture and flavor. And now that we have the Spiced Rum Coconut Caramelised balsamic vinegar, that is going in these cookies too (I am thinking about 2 tbsp). These are a family favorite!
1 c butter 1 c sugar 1 c brown sugar 2 eggs 2 tsp YIAH vanilla sugar 2 c flour 1 tsp baking soda 1 tsp baking powder 1 tsp salt 3 c oats 2 tbsp black forest dukkah (key lime is also delicious) 1 1/2 c raisins (soaked in hot water) Start by soaking the raisins in hot water. Let them sit while making the cookie dough. Cream butter and sugar. Add eggs and vanilla sugar, cream again. Sift together all dry ingredients. Mix to incorporate. Squeeze water out of raisins and add to dough, mixing until just incorporated (don't want to break up the raisins). I make big cookies, so I use my big ice cream scoop. Make 1 to 1.5 inch balls, and flatten slightly. Bake at 350 for about 15 minutes, until edges are golden brown. Great to grab for a breakfast or lunch on the go!
