Pork Bites with Tzatziki Sauce
I love dry ribs when we go out. I am a sucker for them...I just can't resist. But we just don't go out that often! So it was great to find that these turned out just as delicious, if not more so. And of course the kids (and Richard) loved them. In fact, Richard now always suggests these for supper...but you can't eat pork bites every night!
4 pork chops, trimmed and cut into bite sized pieces 1 c yogurt 1 tsp tzatziki dip mix 1 tsp Louisiana creole dip mix
Whisk yogurt and spices together. Add pork, stir and let sit at least 1 hour. 1.5 c flour 1.5 c fine bread cumbs 2 tsp aussie lemon pepper 1 tbsp tzatziki dip mix
Mix in a disposable bag. Using a slotted spoon (so some of the yogurt mix comes off), add pork to flour mix. Shake bag so all pork pieces are well covered in crumbs. Fry in canola oil in a deep pan or in a deep fryer until dark golden brown. You will probably need to do it in batches. Squeeze lemon juice on right before serving, and tzatziki for dipping. Quick tzatziki 1 c plain Greek yogurt 1 tsp tzatziki dip mix 2 tsp Dill pickle relish
