Moroccan Skewers and Peanut Sauce
We always have a lot of beef in our house, because we butcher our own animals. Growing up was the same thing. So new, delicious, different beef recipes are always welcome here!
Well, this one is outstanding. A unique and delicious taste from around the other side of the world, tied together with a sweet, spicy peanut sauce. This is Richards favorite bbq meal. Because of the intensely flavored spices, this works well for beef and wild game. Although it is also great on chicken, pork and lamb. Quick and easy, this is a great way to bring delicious international flavors into your home.
Steak or stew meat, cut in large cubes, about 1.5 to 2 lbs
1/4 c red wine vinegar
1.5 tsp smoked garlic, chili and orange salt
1 tbsp morrocan marrekesh seasoning
2 tbsp caramelised vinegar
Put in bag, shake together well, and let marinate 2 hours or longer. Skewer and bbq until done, about 10 to 16 minutes.
Satay sauce:
1/3 c peanut butter
1/3 c honey
1 lime, juiced
2-3 tsp satay seasoning (or Thai green curry dip mix)
1/3 c cream or coconut milk
Whisk together until smooth. Use for meat, veggies or salad rolls as a dip or a marinade.
