Cheeseburger Casserole (aka gourmet hamburger helper!)

Life with 3 boys. What does that mean? They are dirty, stinky, and gosh darn funny. And when they are hungry, they want to eat now! Plus, even though they are only 3, 5, and 7, they eat a lot, often more than I. What the heck! Supper sometimes needs to be fast and plentiful and, oh yeah, delicious!

So why wouldn't you combine the deliciousness of cheeseburgers, the ease and plentifulness of noodle casseroles, and the wholesome goodness of homemade hamburger helper to create one great, family friendly meal. It is easy, delicious, homemade and satisfying. What more could you want (except perhaps a live in nanny and housekeeper...but that's another post).

6+ strips of bacon 1 onion, diced 1 lb hamburger 2 tbsp perfect ranch dip mix (or 2 tsp Texas jalapeño ranch dip mix) 2 tsp herb and garlic dip mix 1 tbsp worcestershire sauce 5 tbsp ketchup 1 c beef broth 1 tsp porcini salt 4 tbsp Dill pickle relish, or chopped Dill pickles 1 bag elbow macaroni, cooked 1/2 c mozzarella cheese, shredded 1 c cheddar cheese, shredded

Cut bacon in chunks, fry until crispy. Remove from pan, and add hamburger and onion. Fry til browned. Pour off excess fat. Add seasonings, ketchup, broth and relish to hamburger. Simmer until sauce is reduced and slightly thick. While hamburger is cooking, boil macaroni until done. Add cooked noodles and bacon to hamburger mixture. Mix and add cheese. Cover and lower heat, leaving until cheese is just melted. Mix and serve.
