Summer Fresh Corn Salad
Food and celebration go hand in hand. At least for me they do. I love creating seasonal dishes that celebrate the time of year we are in. And even better if company can come over and share!
This is a great dish to make and take to any festivities you may attend, or an easy supper on these warm summer nights, especially as corn and tomatoes are both delicious out of the garden right now!
4 c corn 1/4 c butter 2 tbsp intense garlic evoo 1 tsp lime and cracked pepper specialty salt
Saute in a pan until the corn is starting to brown. You have to watch it, corn burns easily. Take off heat and set aside to cool.
1/4 c light mayo 1/4 c plain yogurt 1 tbsp perfect ranch dip mix (or 1 tsp jalapeño ranch dip mix ) 1 tsp valencian paella dip mix ( or smokehouse bbq) 1 tbsp sugar
Whisk in the bottom of the salad bowl.
Add: Cooled corn mix 2-3 diced tomatoes 1 diced red or green pepper 1/4 c chopped cilantro Salt to taste
This is a great way to use up any frozen corn left in your freezer. For a more complete meal, add a can of black beans, some shredded cheese, and/or shrimp sauted in lime juice and wild lime evoo!
