Amazing Bruschetta

This is my bruschetta bowl. It is white with blue flowers, and from the first leaf of basil and red ripe tomato that appears in my garden, this gorgeous bowl is filled with even more gorgeous bruschetta. You will try this, and never want to have any other. The secret ingredient is the mayo, handed to me from my dear friend Arlene, who is a kitchen wizard. Oh yeah, and the Garlic Caramalised vinegar makes it divine.

Forget salsa, tomato sauce and soup. All your tomatoes will go to bruschetta! #foodywithfamily

1 clove garlic (omit if using Intense Garlic EVOO) 2 tbsp Garlic Carmelised Balsamic Vinegar 2 tbsp Mediterranean EVOO (or Intense Garlic) 1 1/2 c chopped tomatoes 1/3 c sliced green onion (or chives) 1 tbsp fresh chopped basil (I add a little more) 1/2-1 tsp lime cracked pepper specialty salt 1/3 c grated parm cheese 1/2 c mayo

If you let it sit a bit, it gets even better. Good on french bread, crackers, tortilla chips, or top pasta, rice or make a great potato salad!
