Peanut Butter Zucchini Cake

I love peanut butter. And I have lots of zucchini's, so this recipe seemed like a match made in heaven. And it was, it really was. I knew this cake was a keeper when our good friends dad, who happens to hate zucchini, happily ate 2 pieces of this cake, not knowing, and then not caring, that it was chock full of zucchini!! That to me is a win!

This is especially delicious topped with Buckeye Chocolate icing! 3/4 c peanut butter 1/4 c canola oil 2 c sugar 2 tsp vanilla 3 eggs 2 c grated zucchini 1 1/2 c peanut butter chips 2 3/4 c flour 1 tsp salt 1 tsp baking soda 1 tsp baking powder 1/4 c Buckeye Chocolate Powder Mix peanut butter, oil and sugar til smooth. Add eggs, mix til smooth. Add in vaniila. In separate bowl, sift together dry ingredients. Add to wet and mix well. Add peanut butter chips and mix til just incorporated. Put in greased pan and bake at 325, for approx 1 hr.

You can do a struesl top (1/2 c brown sugar, 1/4 c chili chocolate dukkah, 1/2 c flour, 3 tbsp softened butter), but I topped with Buckeye chocolate icing (whip 1/2 c softened margarine, 1.5-2 c icing sugar, 1/3 c buckeye chocolate powder, enough milk to make it the right consistency, about 5 tbsp). It was delicious!
